Marinated cucumbers and Olokoi

My daughter is plant based and I love making vegan or vegetarian dishes for her, because it’s not only healthy, but also expands my recipes that we have on rotation. 

This is my go-to recipe when showing folks how to incorporate Olokoi into recipes. Who doesn't love a marinated cucumber? This is super simple and will soon be a staple recipe in your repertoire!

Ingredients

  • 1 bag of Persian cucumbers
  • 1/2 white onion
  • 2 tbl mirin
  • 1 tbl rice wine vinegar
  • 1 tbl sesame oil
  • 2 tbl chili crisp
  • 2 tbl or more Olokoi

Directions

  1. Slice cucumbers into coins.
  2. Place into strainer and sprinkle with salt to sweat the cucumbers. Let sit for 30 min or more to sweat out some of the water.
  3. Slice the onion into moons.
  4. Rinse excess salt and shake off water from the cucumbers.
  5. Combine onion and cucmbers.
  6. Add the rest of the ingredients and mix well to combine.
  7. Taste and adjust as needed.
  8. Refrigerate and allow the flavors to combine. The longer the better.

Serve as a side, over a bowl of hot rice, or just eat as is. Enjoy!
