Olokoi marinated mushrooms


Ingredients 

  • 1/4 cup lemon juice
  • 1/4 cup avocado or olive oil
  • 2 tbl Olokoi sauce (hot or mild)
  • 2 cloves garlic, chopped
  • 1 tbl parsley, chopped
  • Few thin sliced of red onion
  • Salt and black pepper 
  • A pinch or two of red chili flakes 
  • 8oz package white button mushroom (leave whole with stem)

Directions 

  1. Get a pot of salted water boiling
  2. Add mushrooms and boil for 4 minutes
  3. Meanwhile, add all ingredients to a container, cover,  and shake it up. 
  4. After the 4 minutes, drain the mushrooms and add to the marinade.
  5. Let cool and then refrigerate for several hours for optimal flavor! 

Serving suggestions

  • As a side for a meal that includes red meat.
  • As an addition to a charcuterie board.
  • A garnish to a Bloody Mary.
