Shrimp & Pork Gyoza with Olokoi Chili Dipping Sauce

These shrimp and pork gyoza are filled with a simple, balanced mixture and paired with a bold dipping sauce made with Olokoi

Whether fully steamed or pan-seared for a crispy bottom, they’re the perfect comfort food, finished with a dipping sauce that adds citrus brightness, chili warmth, and savory depth.

The Filling

This combination of ground pork and minced shrimp creates a texture that’s rich yet light.

Ingredients

  • ½ pound ground pork
  • ½ pound finely chopped shrimp
  • 2 teaspoons sesame oil
  • 1 teaspoon grated ginger
  • 1 garlic clove, minced
  • 1 green onion, thinly sliced
  • 1 ½ teaspoons salt
  • ½ teaspoon black pepper

How to Make the Filling

  1. In a bowl, combine ground pork and chopped shrimp
  2. Add sesame oil, ginger, garlic, green onion, salt, and black peppe.
  3. Mix until fully combined.

Assemble the Gyoza

You’ll need:

  • Gyoza wrappers
  • 1 beaten egg
  1. Place 1 teaspoon of filling in the center of each wrapper.
  2. Lightly wet the edges with the egg.
  3. Fold and pleat to seal.
  4. Set aside until ready to cook

Cooking the Gyoza

Option 1: Steam (As Prepared)

  1. Arrange gyoza in a steamer basket lined with parchment or cabbage leaves.
  2. Steam for 7 minutes, or until filling is cooked through.

This method keeps them soft and juicy.

Option 2: Pan Sear + Light Steam

For crispy bottoms

  1. Heat a lightly oiled pan over medium heat.
  2. Place gyoza flat-side down and cook until golden brown.
  3. Add a splash of water and cover immediately.
  4. Steam for 3–4 minutes.
  5. Remove lid and let bottoms crisp again.
  6. Golden and crispy on the bottom, tender on top.

Olokoi Chili Dipping Sauce

Bright, savory, and gently spicy.

  • 2 tablespoons Olokoi
  • 1 teaspoon chili crisp
  • 1 teaspoon sesame oil

Mix and serve alongside the gyoza.

The Olokoi adds citrus lift and layered chili flavor that balances the richness of the pork and shrimp beautifully.
